Does it work on induction?
Yes. The composite steel base is magnetic and flat, so it works on induction as well as gas, electric and ceramic. Match each pan to a ring roughly its own size and it heats evenly.
What is the coating?
A thermal-sprayed stone-look nonstick finish over an aluminium alloy body. That is where the speckle comes from. Use silicone or wooden utensils and it stays smooth.
How do I clean it?
Let it cool, then warm water, mild soap and a soft sponge. No scourers, no abrasive cleaner. Slip the felt protectors between the pans when you stack them.
Do the handles get hot?
The wood-grain bakelite handles stay comfortable in normal use on the hob. Keep the flame under the pan rather than licking up the side, and use a cloth after long cooking.
Black or cream?
The same pans in two finishes. Black hides marks and disappears against a dark hob. Cream is the one people pick for open shelving. Both come with the pale wood-grain handles.
